Set against a million-dollar view of the Waitemata Harbour is FISH, Hilton Auckland’s flagship restaurant.

Its new winter weekend brunch menu, themed  “Kiwi Coastal Brunch”, brings the flavours and textures of comforting, familiar dishes to town.

Coastal favourites like smoked salmon, avocado tartine and ceviche tacos, alongside brunch classics such as Egg Benedict’s with a choice of ham, smoked salmon, or vegan tempeh toppings are among the offerings.

Or for diners with bigger appetites seeking something more hearty, then there’s the smashed beef burger, beer-battered fish and chips, brisket ragu rigatoni and crispy buttermilk fried chicken.

It promises “relaxed vibes, stunning views and delicious bites”, with views that overlook the open waters like you’re on the front deck of a cruise ship.

Stunning views may be an understatement, as I feel FISH has the best views among any waterfront restaurants here in Auckland and feels welcoming even in the winter.

For those who remember, FISH opened under the helmsmanship of Simon Gault, and the first executive chef was Gareth Stewart.

Late last year, Alan Smith took over from Des Harris as culinary director of FISH and brings with him nearly three decades of global culinary experience, having worked in top hotels across the Middle East, Malaysia, China and Australia.

Originally from Ireland, Alan specialises in French, modern Australian, Asian and Mediterranean cuisines.

His vision for FISH is to incorporate New Zealand’s local flavours into the seaside restaurant’s offerings, using locally sourced produce and ethically caught seafood.

The unassuming slabs of battered blue cod are fried to a perfectly crispy, with a crust that encases a flaky, fresh fish meat for the battered blue cod, and New Zealand beef is sourced for its smashed beef burger and baked brisket pasta.

Complete the coastal brunch experience with sweet treats like mango and manuka honey cheesecake, lemon tart and seasonal fruit crepe.
