Unique Asian-fusion baked goods inspired by memories, crafted with love, is how Fankery founder Cathy Fan describes her creations.
From a renovated old ticket booth in the back streets of Broadway, Newmarket, one of the bestselling items at Fankery is Cathy’s mochi burnt basque cheesecake.

Cathy is running a special deal for ChowLuckCard members to get two large slices of her cakes for $40.
Fankery has had a huge following online even before the shop was opened in May last year.
Cathay, originally from Shanghai, started her career as an engineer, and was a competitive bodybuilder before an illness forced her to quit.

She started baking as a way to help her heal from her hypothyroidism, which saw her gain 12kg in a month.
Eventually that healing hobby turned into her own business.
“The mochi burnt basque has the deepest meaning for me because it came from the toughest time of my life,” Cathy said.
“I was going through depression, and sharing food online sort of helped me get my mind away from it.”

She said baking also allowed her to express her creative side, and her celebrated creation, the basque cheesecake with a layer of mochi, retails at $22.50 per slice.
Cathy said she drew inspiration from its original Spanish version, but in her version has added a gooey confection that she made from pounding glutinous rice.
“Each dessert tells a story, a personal blend of flavour, texture and memory,” it is written on Fankery’s website.

“Just as baking helped Cathy heal, Fankery was built on the belief that food has the power to bring people together, to create comfort, and to spark moments worth remembering.”
Her dream is to make Fankery the first thing people think of when they think about Asian fusion bakes.
