Ethereal, the restaurant, is named after the New Zealand thoroughbred racehorse that won the 2001 Melbourne Cup.
Although it is more famous for its aged meats, it launched a seafood menu over winter, curated by executive chef Jinu Abraham.
Also available are classics like fish and chips and Clevedon oysters, to the more fanciful, such as spanner crab croquettes, salt and pepper squid with Sichuan pepper and aioli and creamy tuna and caper mousse.

There’s also the creamy seafood chowder topped with pan-fried fish, smoked salmon confit with beetroot and tonka bean mayo, grilled tiger prawns and beetroot king salmon with pumpkin.
